I started this blog to chronicle my experience paying off debt and still eating well while living in New York City. I’m determined to pay off my student loans in less than ten years, and to avoid eating only rice and beans in the process! In college, I worked on some food waste projects and wrote my senior thesis on composting, and then got hired by the university dining services as their first Sustainability Coordinator, so food has become a career path for me. Even as I budget carefully and make those (gigantic) loan payments each month, buying real, whole, fresh, healthy food remains a priority. Here’s to proving that you can have it all.
